Hadriani – Geographical area of Drama, north-east Macedonia. 1 hectare privately owned linear plot of land, the “passage of the horses”, as they used to call it, at an altitude of 200-300 meters. Clay soil with good drainage due to the presence of small limestones.
The small hectare yield of 500 kg per hectare is achieved with the Green harvest. A quantity of grapes is cut when they are still unripe, so that those that will remain will reach the perfect ripeness.
The harvest is nocturnal, aiming for the grapes to arrive at the winery cool and not hot, as in the daytime harvest. Thus, much faster and without thermal shock, they are cooled for pre-fermentative cryoextraction.
