WINE MAKING

Classic red vinification of the concentrated must due to the Green grape at a controlled temperature and then malolactic fermentation.

MATURATION

On the fine muds. In the underground cellar, oxidative maturation takes place in first-use French oak barrels for 10 months, as well as reductive aging in bottles for 12 months.

Area/Vineyard

Hadriani – Geographical area of ​​Drama, north-east Macedonia. 1 hectare privately owned linear vineyard plot – THE TREE – Pinot noir and 0.4 hectare privately owned linear vineyard plot Agiorgitiko at an altitude of 200-300 meters. Clay soil with good drainage due to the presence of small limestones.

Yield 450 kg per hectare, which is achieved with the Green grape. A quantity of grapes is cut when they are still unripe, so that those that will remain can reach the perfect ripeness.

The harvest is nocturnal, aiming for the grapes to arrive at the winery cool and not hot, as in the daytime harvest. Thus, much faster and without thermal shock, they are cooled for pre-fermentative cryoextraction.

Flavor characteristics

Purple in color with aromas of raspberry, cherry and violet with hints of vanilla and nutmeg. Robust body and soft tannins that enhance the richness of the aftertaste.
